In Mail:

Is there a way do remove the “do not save” option when closing a window with unsend messages ?

I know I can just click “save” but I’m “trigger-happy” and find myself often clicking wrong even though I wan’t to save my draft ?

Not really. It is there to ensure people have a choice.

Thunderbird is a Mail client that has more available support than Apple Mail. You may want to look at and be a part of its program.
