Did you download and install the Big Sur (macOS 11) Jan 2021 Epson v5.8.9 ICA (Image Capture) driver? Without that driver, the operating system has no means to access the scanner via Image Capture.

If this Epson driver still does not work, you might consider the free trial of the paid VueScan Professional scanning software that drives this scanner without the need for Epson drivers.

Contact Epson to resolve this issue, or pay for VueScan Professional. One of those choices will get you scanning again in short order. Apple is simply not responsible for internal Epson product support and functional driver compatibility issues. Apple's responsibility ended with the Big Sur developers kit and loaner Apple ARM products since summer 2020 that Epson had access too.

Thanks for your reply, had downloaded the Epson v5.8.9.ICA driver and I had also tried VueScan Professional which does work but is expensive. I makes no sense that my Epson printer/scanner will not work with Big Sur, first of all the printer didn't work and that was addressed at the following upgrade but the fact that the scanner can't be accessed quite frankly is beyond belief. Am I the only person with an Epson Printer/Scanner who Apple have put two fingers tip to or are there others ?
