"Updating.. name.... People will finish updating when Photos is in the background.: Has been running for days !

If you are seeing this message for a single person, make sure, you are having at least two photos of this person in the library, where Photos can recognise a face. For people, where Photos can only find one photo of this person, photos will be waiting for a second photo for a long time. It is not possible to learn what the person looks like from just one photo. You need several named photos of a person, for Photos to be able to finish updating this person,
