OS 11.2.2 Open Scanner doesn't work image capture error

I updated my MacBook Air (M1 2020) to Big Sur OS 11.2.2 and it no longer can scan.

I have an Epson and HP multi function printer on my network. Both print normally.

When selecting Scan>Open Scanner nothing happens.

I downloaded the latest drivers for each, still nothing.

Following the Apple help files for OS 11 I tried to import from scanner in Preview.

The Scanner appears, and then I get "The operation couldn't be completed." screenshot attached.

Epson Scan ap (terrible) works, HP does not.
