I reset my MacBook Air and now it won't update to macOS Big Sur

I factory reset my MacBook Air and now it will not update to macOS Big Sur. It says "You may not install to this volume because it is currently being encrypted."

You'll have to wait until the volume is encrypted, and then you can proceed with the upgrade. That might be installing on the encrypted volume, or potentially disabling encryption. Given some owners have had their MacBook Air lost or stolen, having data encryption enabled with a robust password protects the contents of the Mac.
