What does that have to do with the price of bananas?

Video Support

Simultaneously supports up to two displays:

One display with up to 6K resolution at 60Hz connected
via Thunderbolt and one display with up to 4K resolution at 60Hz
connected via HDMI 2.0

Thunderbolt 3 digital video output supports

Native DisplayPort output over USB‑C
Thunderbolt 2, DVI, and VGA output supported using adapters (sold separately)

HDMI 2.0 display video output

Support for one display with up to 4K resolution at 60Hz
DVI output using HDMI to DVI Adapter (sold separately)

So you plug one monitor into the Mac mini HDMI port, and you plug in a Thunderbolt 3 dock with an HDMI, or DisplayPort, or any other port you need, and USB ports. The 2nd monitor plugs into the Thunderbolt 3 dock.

Or as woodmeister50 says, you can use a USB-C to HDMI adapter. I've used one of those for an intel Mac in the past.

The 2 Thunderbolt ports can accept just about any of the existing Thunderbolt 3 docks, adapters, USB-C to xyz cables.

Thanks so can you recommend a usb-c hub that has at least 1 hdmi connection and multiple usb 3.0/3.1, usb 2.0 , Usc-c, ethernet and card readers on it that has its own power supply and that is plug and play.

Seems like you are trying to kill a flea with a sledgehammer.

Simple solution: USB-C to HDMI adapter for the second display,

For additional USB ports, a simple basic USB 3 hub (with as many

USB ports as needed) that has its own power supply plugged into

one of the USB A ports.
