How many monitors does the M1 Mac Mini support without a docking station?

I'm considering moving to a new Mac Mini, but ran into comments they only support one monitor. Someone mentioned in a thread from December a Big Sur update may change that, but I can't find articles if this has happened. Is anyone able to get three monitors working on your M1 Mac Mini using the HDMI and dual Thunderbolt ports?

The 2020 M1 Mac Mini supports 2 Displays. 1 display from the HDMI port and 1 display from a USB-C port.
