Why are emojis I haven’t used showing up in my frequent/recent list? I rarely use emojis at all, and the list has 34 on it! Some I haven’t even ever seen.

If you're asking how to reset and erase recently used emojis, go to the Settings app → General → Reset and tap on Reset Keyboard Dictionary.
