If you switch off the Find My network on your iPhone, tho', you won't be able to use Find My to locate it if you misplace it and it's offline. (I'm not saying that's an important trade-off to everyone, but it's one you should be aware you're making.)

I'm not sure that you can. It is in the same network as Find My iPhone and uses the same technology. The relay process does not use any data from your plan or carry any personal information from your device so I do not see why you would need to, as it just helps the community as a whole.
