Small Toolbar Icons in multiple Applications with Big Sur (Mail, Calendar, pages & Third Party Apps such as Path Finder, Omniplan)

Upon upgrading to Big Sur, the toolbar on a number of applications was reduced in half. Some applications were upgraded and others did not need to upgrade yet the icons all changed to the smaller version.

Below is a comparison between a number of applications that I have experienced this change in the toolbar size.

Changing the Display settings (attached) to larger size only makes the text size larger.

Is there anyway to change the toolbar Icon size (not the tool bar text size).
