iwatch update

I've been trying to update my iwatch all day. I updated my phone to the latest IOS version which then prompted a watch upgrade. It would not update and required me to unpair my watch and re-pair. It took hours to verify the update, and now has been on install for several hours. My watch will not allow me to use until this is done. What am I doing wrong? And yes, it is on the charger and at this point fully charged.
