1. Hi ,
I have a macbook pro M1 2020.
In order to maximize my macbook pro battery lifespan, is it a good practice to
shut down my machine EVERY DAY ? Or sleep it while I am not using it? ( I will make sure my mac OS is updated , so no OS update is needed while at sleep.)
2. Is it good to always connect to the power adapter and have 100% battery? Or use the battery to maintain at 30%-80% level every day ?
The basic rule of thumb is, if you are near the mains leave it plugged in, if you need the portability then run on you battery.
In this way you extend the working life of the battery by minimizing the cycle count.

There is no harm in closing the lid to let it sleep. There is no need to shut it down on a regular bases.
macOS Catalina 10.15.5 introduces battery health management, a feature designed to improve the lifespan of your Mac notebook's battery.

The Battery Health button appears in >System Preferences>Energy Saver/“Battery” in the newer macOS —this feature is limited to Mac laptops with Thunderbolt 3 ports. That equates to all MacBook Pro models released since late 2016 and the Retina-capable MacBook Air models released since 2018.
With the release of macOS 11.0.1 Big Sur see >System Preferences>Battery
The battery health management software (BHM) can put on hold your charging this is the new normal.
It interpolates your usage pattern, and can hold it at 92% 84% 72% etc. however it deems best.
Click the battery icon in the upper right if you need a 100% charge for portability
