When composing emails in Big Sur a new email is opened in a tab in the same window. is there any way to revert to the previous way of composing emails - ie each in it's own window?

System Preferences > General. Change "Prefer tabs:" to "never" or "in full screen".
Ha! Excellent - I have been hunting for this solution since Big Sur came out!

Thanks for the response, but that's not what I am after.
What I would like to know is how to compose more than one email, with each having it's own window, rather than in a new tab in the same window. I realise I can click on the tab and request to open the message in its own window, but I would like that to be the default, rather than a special request? It used to be, before Big Sur.
