How can I turn off sound and haptics on the IPhone 8?

Sound and haptics is a Settings subgroup to control sounds and vibration feedback from many apps.

you can turn off sound with the mute switch.

Sounds clicks and vibrations generally need to be turned off in the settings for each app.

You may have some general control over vibration in Settings, Accessibility and turn off System Haptics in Settings, sounds and haptics.
