My notes are stored in iCloud.
How can I recover a note with Time Machine deleted 1 month ago?

Go back to the point in time when you lost the note and restore the Notes app.
When I open Notes, then launch Time Machine, Time Machine shows me the Finder with my files and folders.
and nothing about Notes.
