I have finally had to switch from the older version of Pages (which honestly I wasn't too happy about in the first place) and evidently there is no way to switch my document to outline view? This super screws me for my job. If anyone has any advice I'd greatly appreciate it.

Pages has no outlining functionality. There are many apps for the Mac that do support outlining, among them Microsoft Word (and its free open source clones, such as the "navigator" view in LibreOffice), Mellel, Scrivener, OmniOutliner and many others..
