I'm using Pages 12.1, the latest Pages upgrade, I believe. The "outline" function seems to have disappeared in this version, amirite? If so that's a bummer since I use outlines a lot.

It is called the Note Taking template, and does not provide the outlining features that were present in the venerable Pages '09 v4.3, or that you would have in MS Word, LibreOffice Writer, or several other word processing applications.
