If you're saying you can't reinstall Big Sur after erasing your Data volume, then go back into Recovery OS, open Disk Utility, change the View to Show All Devices. Then, click on the Container that has your Macintosh HD and click Erase. This will delete all volumes in the Container and format a new Macintosh HD. Last, try your reinstall again.
You need to explain in detail what you did.
Reinstall from where? Did you migrate your account from another disk or Time Machine backup?
