How do I change the outgoing server for an individual email using the Big Sur mail app?

If you have multiple SMTP servers in the outgoing server list, you should see a From popup menu on the compose window. You would select it from there.
If you don’t, you’ll need to add one via the Outgoing sever popup in the account preferences in Mail.
