I upgraded to IOS 15 and use speaker when I am in meetings all day. Now when I click the mute button it makes a noise. How can I turn this off? I specifically do not use the mute button in zoom or webex because those make noise and I don't want to hear it.

At this point, you can not turn it off. You can let Apple know your thoughts on the matter here:

You cannot.
It makes noise regardless if on silent. And no way to change it in the settings. Super distracting when trying to mute and unmute a call.

Got it, thanks for letting us know. Does the sound appear to be like a notification sound (or similar) or does it seem to be a sound that seems hardware (like a click, so on) in nature? Do you continue to hear the sound if you toggle the Silent/Ring switch and restart your iPhone?

Having the same issue. There is a chime when you mute and unmute calls now on iOs 15. Does not matter if you're using the phone, speaker or headphones. How do you turn this off? Caller on the other end says they can also hear it. I don't want my callers to know when I am muting myself. How do I turn this off? Very annoying!

Presumably, because they don't believe it to be broken. It appears to have been a deliberate choice on their part. You can, however, let them know your thoughts about it here:
This mute sound isn’t to inform you that a mute is activated. The mute sound is to let the other person/s in the call know that you’ve muted them. So like for example, your telling your wife your heading home while your buddy’s are giggling in the background and you mute the convo to top them to shut up, she’ll know she’s been muted. Then she’ll proceed to ask you when you muted her, then she’ll ask you to FT her because she wants to see what your doing. LOL.

Apple of all companies which prides itself on choice, should allow me to decide if I want the person to know if I've muted them or not.
You must be talking about a different "Apple" company. The Apple that makes Macs and iPhones has spent decades telling people what Apple thinks they need and giving it to them whether they like it or not. Since Mr. Cook took over, they've gotten a tad more flexible but not much.
It’s not Siri it’s the new iOS stupid update that makes a chime when you put someone on mute. The caller can also hear it!

It appears that after updating to iOS 15 you are now hearing a sound after tapping the mute button on your iPhone. To confirm, are you talking about the mute button in the phone app? Came here for the same issue. Recently updated to iOS 15 and noticed a sound when I toggle on/off the mute button in the phone app. As claire504 asked, I do hear the sound even when the Silent/Ring switch is set to silent. I did have my headphones in at the time if that makes any difference.
I rebooted my phone and I am still having this issue and I hear the sound regardless of the toggle switch. I do not like sounds for notifications so it's hard for me to answer your question but in general I would say that is the sound it makes.
Same issue. I updated my iphone XR to ios15, while on calls, if you touch the mute button to mute the conversation, the mute button makes a sound with each push. It sound like, ting, when you mute and unmute.
Such BS and a stupid addition. I don’t need a chime to tell me that I’ve selected to mute myself I see the dang button is on on the screen. Plus the caller on the other end can totally hear the chime when you press it!
