iOS 15 turn off mute sound on group calls

I upgraded to IOS 15 and use speaker when I am in meetings all day. Now when I click the mute button it makes a noise. How can I turn this off? I specifically do not use the mute button in zoom or webex because those make noise and I don't want to hear it.

Presumably, because they don't believe it to be broken. It appears to have been a deliberate choice on their part. You can, however, let them know your thoughts about it here:

This mute sound isn’t to inform you that a mute is activated. The mute sound is to let the other person/s in the call know that you’ve muted them. So like for example, your telling your wife your heading home while your buddy’s are giggling in the background and you mute the convo to top them to shut up, she’ll know she’s been muted. Then she’ll proceed to ask you when you muted her, then she’ll ask you to FT her because she wants to see what your doing. LOL.

Apple of all companies which prides itself on choice, should allow me to decide if I want the person to know if I've muted them or not.

You must be talking about a different "Apple" company. The Apple that makes Macs and iPhones has spent decades telling people what Apple thinks they need and giving it to them whether they like it or not. Since Mr. Cook took over, they've gotten a tad more flexible but not much.
