I am going to custom order a Macbook Pro in about a week or so ... do they offer next-day shipping for custom orders? I am just curious because I need to make sure I don't need to call into work ugh!
That will depend on the options you choose. You can canfigure a Mac right now and it will tell you how long they estimate it will take them to get it to you.

if I order the same computer, but specify 2TB storage, my delivery date slips out to Oct 19 to 26.
Non-standard configurations have to be manufactured after order. Computers are not stock piled except for possibly some standard configurations.
If I were to order it today , according to apple it says it would be here by Monday. I also notice there is in store pick up at almost all locations near me. I’m guessing that is a major factor as well correct?
You have likely accidentally ordered a common configuration that is either in stock or nearly arrived for stock, and can be delivered as if from stock.
If you specify unusual items, such as a large size RAM or very large storage, it may have to be custom built, which can take several weeks or longer, depending on exactly what options and what parts are on hand at the factory.
So It is all based on in-store availability I'm guessing. I ordered mine and it was delivered within 24 hours of my purchase. The 2-3 week shipping was for a 2tb SSD version. The 1tb which I purchased was in stock. I do not live in a city with an apple store either.
It may change from processing to shipped at any moment, and can get to you in the US very quickly. Airlifted overnight, whisked through customs, and handed to local carriers for expedited delivery.

I ordered a pretty standard MacBook Pro on 9/23 and I still haven’t received it. There is not local either. Apple customer service hasn’t been very helpful. The end of my shipping period is in 2 days and I know nothing. Mine is still stuck at processing.

Don't bet on a a model you want being quickly available, because that could change.
