The watch news refresh or updating happens very infrequently and randomly. It might update in 3 days or 2 weeks and you never know when. The same happens with CNN. I've restarted my phone and watch, reset, reinstalled the apps. Nothing seems to fix it. I have an iphone 12 and Apple watch 6 and both indicate software up to date. 15.1 on the phone. I didn't have this issue back in the ios 14'ish versions.

To get started, is you’re Apple Watch connected to Wi-Fi and to your iPhone? If your Apple Watch isn't connected or paired with your iPhone & Connect your Apple Watch to Wi-Fi
On your iPhone, if you open Settings > News, is Background App Refresh enabled? Switch apps on your iPhone, iPad, or iPod touch
Do you have Low Power Mode enabled on your iPhone? Use Low Power Mode to save battery life on your iPhone

If your devices are connected to each other and the internet and the issue is isolated to the News app, follow the steps here: If an app on your iPhone or iPad stops responding, closes unexpectedly, or won’t open.
If the issue continues after following those steps you may want to Contact Apple for support and service.

Nope, all these things are correct. I'm thinking that it only happened when I upgraded to ios 15 the 15.1. Not an issue before.
