The built-in storage space display refuses to detect how much space is being used on my iPhone. It consistently says that 0 KB of space is being used, when the real number is obviously much higher. It won't recognize certain apps as having Documents & Data, even though some of them have several GB. Is there any way to reset this and get it to display an accurate number?

Ask and yes shall receive. Simply update your iPhone to the newest release which came out today, iOS 15.1. Memory utilization is now accurately reflected after the update.
As I have told you before the latest version (15.1) of iOS has NOT solved this. You need to update your post so that you are not spreading false information.
Actually, I edited it out because I updated to 15.1 and the issue still persisted.

This is a bug. It will surely be fixed in an update at some point.

From what I hear even if you back up your phone, then delete everything and start over does NOT work.
I did call Apple a week ago and they said as long as the phone is working completely and that’s the only issue it has, to just leave it alone.
Hopefully they will resolve it. Until then I’m just going to let it go. All I can do.
Thank you so much for your response. I also have another issue. when i transferred a picture from my iphone 12 to macbook, the picture is damaged and cannot be opened. I already called the apple engineer las week, and they also cannot resolve ot.
Its so helpful to hear that others are having the same problem since updating to 15.0.2. (My phone is an SE, and this problem only began after the updated iOS). I'll trust that Apple software engineers are working on it.
iTunes likely won't show your actual storage, since the "Other" category will occupy the entire drive in their graphic. (You can add up the other categories... Data, Music, etc., to get a general idea as to actual space occupied.) Hopefully this issue will be addressed in the next update.
Yes, the update doesn't say that it contains a fix for the mis-read of storage space. Maybe Apple is hoping that most people didn't notice this embarrassing problem and is pasting a Happy Face on the update. Or maybe Apple didn't even know that the update would fix it. Whatever, I'm grateful I don't have to wipe and restore the phone.
iOS 15.1 has fixed it for me too. It doesn’t update it right away in IPhone Storage as other posters have mentioned. But after you update, you should be able to immediately see that Avaiilable is less than Capacity in Settings>General>About. Previously, the Available used to be greater than Capacity! General>iPhone Storage will take some before it shows the correct value.
I’m experiencing the same on my 13 Pro running iOS 15.0.2 and I’m definitely not in the mood to backup everything and start over. Hopefully an update is released soon that will remedy this issue.
Same issue here with my 12.9 inch iPad Pro. Spoke to Apple support today and they acted like this was new news and could not assist.
