I bought an Apple Watch Series 7 but I am not able to see where I can enable the qwerty keyboard.
There is an option in the Settings app?

At the moment, QWERTY keyboard only appears to be available when English is the main language set on the watch.
Open the Watch app on iPhone, go to General, then Language and Region and then change the language to English
If you mimic your iPhone you can get other keyboards.
