Dual Boot, Dual FileVault?

I would like to have a dual boot configuration in 2 APFS volumes sharing space in the same container.

I also want to have FileVault prevent access to information stored in both volumes.

The question is: Would activating FileVault in both instances of macOS to protect both volumes degrade performance even further that having it protect a single volume?

Does FileVault 2 encrypt unused space when expanding an APFS volume? I understand that if I create a Windows partition through Bootcamp Assistant on my Mac running macOS Catalina (in APFS), my APFS container will shrink to make room for the Bootcamp partition. However, if I later decide to delete my Bootcamp partition through Bootcamp Assistant, my APFS container should re-expand to fill up the space. My question is - if I have FileVault 2 enabled on one of the volumes in my APFS container, and then I delete my Bootcamp partition, when my APFS volume expands, does FileVault 2 immediately encrypt the new unused space that used to be in Bootcamp, or does it remain unencrypted? Access rights between APFS volumes I am currently having 2 APFS volumes (1 by default and 1 created by myself) on the same APFS container running 2 separate Mac OS (both are running on Big Sur - 1 for work and 1 for personal use. Personal OS is on the default APFS volume and Work OS is on the other APFS volume I created. Currently, once Work OS is booted up, it would ask me to enter the password for the Personal OS APFS volume to allow access to my Personal OS APFS Volume. However, if I boot with Personal OS, it would not ask me this message and I would have access to Work OS data without doing anything. How could I avoid one OS having read and/or write access to one another under this set up? Is it possible to make these 2 OS totally separate to each other? Thanks!

FileVault encrypts Data volume as well? I'm prepping my computer for re-sale. In Preferences it says: FileVault is turned on for the disk "Macintosh HD". When I open the Disk Utility app, I see the Apple SSD has under it Container disk1, and under Container disk1 there are two volumes: Macintosh HD and Macintosh HD-Data. My question is: when Preferences says FileVault is turned on for Macintosh HD, does that mean Macintosh HD-Data is also encrypted?

After the encryption is completed in the background—there is no noticeable slow down (ie "degrade performance.")

Use FileVault to encrypt the startup disk on your Mac - Apple ...

Not anymore. Volumes are independent. The OS Volume isn’t encrypted when you enable FileVault.
