Since upgrading to MacOS Monterey, Quicktime Player now stops recording at 10 minute and 55 seconds. I can no longer record any video segments longer than that. Prior to upgrading, I routinely recorded Quicktime videos in excess of one hour.
I've confirmed that this behavior occurs both with the built-in Mac camera and an external Logitech Brio camera.

It is resolved. I made the adjustment with the battery options... Make sure that all boxes in "Battery" option are unchecked except "Optimized battery charging" and "Show battery status in menu bar" and go to "Power Adapter" option to uncheck all boxes. It is important that "Turn display off after:" changed to "Never" on both "Battery" and "Power Adapter". I tested it and the camera recording ran more than 20 minutes without abruptly stopped it.
I'm sorry to hear it didn't work.
My issue is that it stops recording audio after 9 seconds on my M1 MacBook Pro and replaying the audio yields high-speed playback sounding like chipmunks...
Possibly related you your issue, or an M1 specific issue.

The links from Apple support provided in a reply below are woefully unhelpful as they simply contain instructions for recording a movie in QuickTime, which it can be assumed we already know how to do, because we are recording them until the machine stops the recordings at 10:55.
This is extremely annoying, I would very much like to convert my old VHS tapes to mp4 files as I did before. I'll install Big Sur again and keep running my laptop on that OS unless it results in anything more inconvenient than this issue.

The laptop is connected to AC power. Restarting does nothing to resolve the issue. At exactly 10:55, the recording stops for no apparent reason. The following message appears.

The recordings stop automatically regardless of whether I use an external webcam or the built-in camera.
Well I feel a little better, I'm getting to 10:56. I'm moving old VHS home movies to digital.

Not resolved for me... I don't have those battery options, as I'm on a Mac mini. I've tried bumping all the Energy Saver options to "full" or whatever is applicable for not sleeping. No difference.
Fair enough! The information I share for people who are willing to get it worked rather than wait for Apple to send another patch.
