I just updated on the ios15.1and my Ipad air pro is very very slow.
I do a speed test on my connection and it’s reduced by 20!
There is plenty of memory space and there was no issue at all with the ios14
How can I go back to previous ios 14?

Have you tried connecting to a different WiFi network - preferably a 5GHz network. WiFi performance on congested 2.4GHz WiFi networks is not uncommon.

I’m unable to replicate your performance issues - and see expected throughout for both 2.4GHz and 5GHz WiFi networks.
A further step to try is to reset your Network settings:
Settings > General > Transfer or Reset iPad > Reset > Reset Network Settings

you may try to force restart hold the power button and power button
it may be your ipad storage is low or the ipad can't support ios 15.1 well
