Just go to settings > general > keyboard and find the item which talks about Key Flicks and turn it OFF.
You cannot restore the previous keyboard layout.
If you don’t like the current iPadOS keyboard layout, as implemented on your model of iPad, you can always use a third-party alternative. One of the popular alternatives is Typefinity:
