Is it possible to play music, podcasts, audiobooks, etc. on an Apple Watch without connecting a Bluetooth device? I just want to use the speaker on the Apple Watch. Whenever I press play, it asks me to connect a device first.

No. The speaker on Apple Watch would sound so horribly bad that using it to stream content would be most disappointing, so Apple has you connect Bluetooth speakers or headphones.
