The issue started around August, and despite updating the YouTube app several times since (and re-installing too), the issue persists.
Everything works normal on Wi-Fi connection, and this is the only time I had this problem. I have an iPhone 8 with iOS 14.8.1, but consider updating to iOS 15. Any and all help would be much appreciated!

It's always good to keep your iPhone updated. Apple's updates contain software that is crucial to the operation of your iPhone. Let's go ahead and make sure you have a current backup of your iPhone and update it: Update your iPhone, iPad, or iPod touch - Apple Support
Also, make sure Cellular data is turned on in Settings > Cellular > YouTube.

Thank you for your timely and concise answer. Going into Settings > Cellular > YouTube worked, as it seems I had forgotten to turn YouTube back on after coming back from abroad.
