I need help adding my Apple Watch to my iPhone

So I have an Apple Watch series 2 and a iPhone 8 (iOS 15 ) and the Apple Watch belonged to my uncle he erased it from his phone and when I add it says to update but I am updated to the latest iOS on my phone and the screen is stuck on this is there any way around this
