I want to back up my son's phone to my laptop. In order to do so we have to verify his account. The number to send his verification code is not his phone number anymore. How do we change the number in his apple account?

If you can get a code, log into his Apple ID. He needs to change/add the number on his Apple ID. Look in the Security section when signed in online. He may have to add the new number before he can remove the old number. After the change, allow up to 24 hours for the change to sync. Before trying to make the change, sign out of Messages/FaceTime on all devices/computers.
