I just bought a new MacBook, now what?

I'm looking for information/guidance on how to transfer my iCloud data to my new computer and how to authorize/deauthorize access to my cloud. A couple of other questions I have is how to set up a new cloud, (I'm thinking about giving my old mac to my daughter and I don't want issues with her data conflicting with mine and her accessing/deleting my data). I guess the final question I have is, is there a way to transfer purchased programs from one computer to another (specifically Microsoft Office), I have an annual subscription and I would hate to buy two subscriptions just because I upgraded my computer. Any information provided would be very helpful.

MacBook Pro (2020 and later)

I would recommend not using a new Apple ID. You can use the following procedure to clear your old Mac and your daughter should then set it up using her own Apple ID. This procedure will not remove any of your data from iCloud. What to do before you sell, give away, or trade in your Mac - Apple Support

Then you can turn on the desired iCloud options (e.g., Contacts, Notes, Reminders, iCloud Photos, iCloud Drive, etc) on your new Mac and your iCloud data will sync to it (assuming the same options were previously turned on in your old computer).
