What happens if I remove my Apple ID from my children's iPhone?
I have my kids phones connected with my apple ID if they change their apple ID what will they lose off their phones?

It depends upon what you mean by "lose". They won't "lose" anything that's already on their phones but they will lose access to redownloading anything purchased with your ID as well as the ability to update any apps downloaded with your ID. That is, however, unless you turn on Family Sharing after you create new IDs for them. Transferring data is not officially supported, nor can it be done easily or completely.

Look into using Family Sharing to continue to be able to use items purchased with one Apple ID with other Apple IDs.

Fortunately when you sign out of one ID and sign in with a different one it asks you in most cases if you wish to retain the data from it on your device. Say yes and then delete individual items on their phones that they do not want.
Sign out of iCloud on your iPhone, iPad, iPod touch, Apple TV, or Mac --> https://support.apple.com/HT208242
If another Apple ID is signed in you may need to enter the password for that ID to sign out of that ID first.
