Undo autocorrect when copying text from photo

I'm copying text from photos of a foreign-language text. I take the photo, move it to my Mac (2021), highlight the text, copy it, and paste it. It works *perfectly* besides when the words from the text are similar to an English word: for instance, "nosse" turns into "nose", "audiro" turns into "audio", etc. It seems there is an automatic autocorrect. I'd like to disable it. But how? (I'm reading Latin––I can't turn my Mac into a Latin system because it doesn't exist)
