I have turned off Apple Watch’s auto pause feature during workouts via the Settings menu, but it still auto pauses when I stop running. Please can you tell me how to actually get it to turn off?

The next step would be to unpair and re-pair and if that doesn't work unpair again and setup as new not from a backup.
Watch app on the phone;
Tap on workout then tap on autopause and turn it off.
Restart phone and watch.
