A deleted contact info keeps popping up when composing a new iMessage and when clicking the "I" to "remove from recents" nothing comes up and I get blank page like shown in the screenshot. Any help would be appreciated

Welcome to the Apple Support Communities. We understand that a recent contact is going to a blank contact. We'll do what we can to help.
It is expected that you cannot remove recent contacts from iMessage, but it isn't expected for that contact to be blank.
Are there any blank contacts in the Contacts app itself? If so, try removing them: Manage and delete contacts on your iPhone, iPad, or iPod touch
If you still see the same things or there are no blank contacts, Restart your iPhone

I checked and there's no blank contacts. Also when I restart my phone the same thing still pops up
