When attempting to backup my iPhone to my Windows 7 PC, it says I need the latest version of iTunes. I already have what says it is the latest version of iTunes when I try to get the latest version. I have 12.10.11.2.

Time to upgrade to Windows 10 or 11. iTunes is no longer supported for Windows 7 and, as you have found, cannot backup devices running iOS 15. The current version at the time of posting for Windows 10 & 11 is iTunes 12.12.2.2.
