Bluetooth issue - Connection Unsuccessful "MacBook Pro" is not supported

I have this issue, and searched a lot of fix blogs and articles with no result,

I Tried to Reset All Network Settings on the iPhone and Resetting the Bluetooth Module on Mac with no result, please note that it use to work fine and I'm using it a lot to make calls from My MacBook Pro 14 with M1, but after doing a restore for my iPhone 12 Pro Max due to cable connection issue, I was unable to connect to the iPhone

One can't pair an iPhone to a Mac like one pairs headphones or earpieces,

There are apps and services that use wifi and bluetooth but the connection is made in the app when yu try to use the app or service.
