I have been importing old photos into the Photos app as I want all my photos in one place.
These are photos from 2017 and older. However, when I import them to the correct folder they also show up as my most recent photos.
I am importing 100s of photos that are quite old. They all have the correct time stamp so do not understand why they are showing up in my recents, looking like they are new pictures.
Any way I can fix this?
No way around it. Just don't use recents.

Actually just sorted in order of when they were added to the library. For example, editing a photo doesn't bring it to the top of recents.
Ah I see! How come then when someone airdrops a photo to me, that picture is being put in the correct time and date within recents?
Any way how to hide the newly added pictures from recents or is there no way around it?
There's nothing to fix. Recents means photographs you have recently interacted with, not one you've recently taken.
