You can do ~20-80% if you want to monitor the charging, certainly won't hurt anything. But you'll get a little less usage out of your phone before you have to connect and charge it again.
Plugging your phone in overnight and leaving it plugged in, having Settings > Battery > Battery Health > Optimized Battery Charging turned on is what I believe the official recommendation from Apple would be. That would allow your phone to 'learn' your habits. Mine for example charges to 80%, then brings it up to 100% by about 4-4:30 in the morning because I get up a little after 6:00. It even comments on the Lock Screen when I go to bed when my alarm is set and what time it'll do the final charge top off. I believe what is hard on the battery is if it were fast charged from 80-100%, not actually being at 100% charge.
I definitely would NOT allow the charge to go down to 0% though. My understanding is that it's hard on the battery. I don't allow my charge to go below 20-30%.
