Apple Support Communities is a wonderful place for help with the Notes app on your Mac. To confirm, it sounds as though you’re able to successfully export a note to a PDF, but some of the content doesn’t load as expected after doing so.

We also want to advise that deleting the app isn’t supported, so you would want to follow the first three steps shown in the article.
