Windows 10 pc running iTunes, all up to date versions, iTunes doesn't see or recognize iPhone!

That's good news, although it isn't usually necessary to uninstall iTunes in order to update it. Simply click on Help/Check for Updates and follow the prompt. If you install the version of iTunes from the Microsoft Store, updates are automatic and the option to check is not present.

Which specific version of iTunes are you using? The "latest version" is not the whole story. Look in Help/About iTunes.
