We see you're looking for information on why your notes are jumping to the beginning of the note after leaving it for some time to use another app, right?
While this may be expected to occur as the Notes app could be viewing this as a new visit to display the title of the note, let's see if we can help to determine that. First, let's be sure you're up to date with the latest iOS version on your iPhone. If you see an update is available, be sure to create a backup of information first. Update your iPhone, iPad, or iPod touch wirelessly
1. Back up your device using iCloud or your computer.
2. Plug your device into power and connect to the internet with Wi-Fi.
3. Go to Settings > General, then tap Software Update.
4. If you see two software update options available, choose the one that you want to install.
5. Tap Install Now. If you see Download and Install instead, tap it to download the update, enter your passcode, then tap Install Now. If you don't know your passcode, learn what to do.
You might see that your device is up to date and that there's an upgrade available. For example, even if your device is up to date with the latest version of iOS 14, there might be an option to upgrade to iOS 15. You might want to upgrade iOS when you pair an accessory with iPhone.
If you see that you're up to date, let's see if you can isolate when this occurs. If you open a note then switch to another app, do you see that the note then jumps to the beginning every time, or is this occurring at random? If this is occurring at random, see if you can determine if a specific app could be triggering this to happen.

Search for a note or attachment
To search for a specific note, just tap the Search field, then enter what you’re looking for. You can search for typed and handwritten notes. Search can recognize what's in the images inside of your notes. For example, if you search for "bike," search will show you all images that you have with a bike. Search can also find specific text inside scanned documents or images, like receipts or bills.
To search for something in a specific note, select the note, tap the More button, then tap Find in Note and type what you're searching for.
You can also search for attachments. While you're in a Notes list, tap the More button, then tap View Attachments. To go to the note with the attachment, touch and hold the thumbnail of the attachment, then tap Show in Note.
