My wife is getting a MAC Book air. Mainly while on vacation for email web searches, photos , Facebook and zoom calls where she is participant not host. No business functions on MAC.
Is the apple M1 with 256GB good for this. I am saying this as I won the MACBOOK AIR and has 256GB
Ok until you need a external storage.

Those are very basic activities. I don't see why it would not work. 256GB is not much so she won't be able to store much data. An external drive will work if needed.
