Apple Watch Backups

Due to an input error on my part, my Exercise ring on my watch was way off. I had read in order to fix it that I could restore the watch from a previous backup, starting with unpairing it. I did so and when I went in to back it up, the only backup that was showing on my phone was the one it created before unpairing. I've got the watch set up to automatically back up but for some reason it doesn't look like it is. What do I need to do to ensure it is backing up regularly?
