Passcode options grayed out

In the Apple Watch app all my passcode options are grayed out. So I cannot set a passcode for the watch. My understanding is that this is caused by an enterprise policy enforced on my iPhone which affects how the watch is secured. The side effect to this is that there is no way to unlock the watch unless I’m wearing it and unless I have my iPhone unlocked. So my question is, what happens if I lose my iPhone, or if it is reset, or broken where it becomes unusable? How will I access my watch then? How would I reset my watch when I get a new iPhone?

To unpair and erase watch and remove Activation Lock

From a web browser,sign in to iCloud.com with your Apple ID.

Go to Find iPhone.

Click All Devices at the top of the screen.

Click your Apple Watch.

Click Erase [device]. Select Next until the device is erased.

Click Remove from Account.
