macOS Monterey does not have a setting under privacy to enable screen recording using Zoom

When using Zoom with OS Monterey the share screen option shows desktop only. When user opens any program it is visible to him but to no one viewing the shared screen over Zoom. All support solutions say to go to system preferences, privacy, and to screen recording to enable the Zoom app. Screen recording is not a choice in Monterey. Catalina seems to be last version with that option

If not seeing the option to allow screen sharing on the Zoom app only on a Mac running macOS Monterey, the best option would be to reach out to the Zoom's support directly. They'll be the best option to provide more information and possible troubleshooting steps on this particular issue.
