You can always force quit a shutdown by holding the power button/TouchID for ~6-10 sec.
Force Shut down your Mac.
Log out, sleep, wake, restart or shut down your Mac
Shut down or restart your Mac - Apple Support
Reboot as normal and see where this leaves you...
If necessary reboot into Safeboot mode, log in and then run the installer again

Option > Command > Escape and choose Force Quit of the update.
Or you can press and hold the power button until the Mac shuts down.
1 - Suggest restarting in Safe Mode. This will perform a Disk Repair, clear cache files and only load Apple Software, extensions and fonts. The boot up will be slow and can take some time - Normal.
If it is an Upgrade to newer version of macOS and Empty Space Requirements was not met plus Safe Mode does not work >>
1 - Transfer files between two Mac computers using target disk mode
2 - Visit an Apple Authorized Service Provider or Visit a Genius at an Apple Store
3 - Once the upGrade process has commenced, the Cancellation of the upGrade AFAIK can not stopped.
Q - " How do I force quit a Macbook update that is frozen. Has been frozen for 2 days. I have restarted the update twice to no avail. "
A - Have to ask, is this an update to Catalina macOS 10.15 or an upGrade to a Newer version of macOS this computer Qualified to upGrade into ? This may sound harsh, but some people mix the two which are very different from one another.
1 - If this was in fact and UpGrade to Big Sur macOS 11 = Empty Space Requirements specific to the Big Sur. Apple states 35.6 GB Empty Space but suggest 50 GB
2 - If this was in fact and UpGrade to Monterey = Empty Space Requirements >> If upgrading from macOS Sierra or later, your Mac needs 26GB of available storage to upgrade. If upgrading from an earlier release, your Mac needs up to 44GB of available storage.
No this does not work. It reboots and just goes right back to where it was, updating the latest version, the download bar is full but nothing happens.
I think my computer is too old to handle the update and I wish I hadn’t tried to install it now
I have force shutdown my mac and rebooted it several times. I log back in and it stays stuck on update. I need to force quit the update itself
Option command escape doesn’t do anything.
holding down power button… I know how to shutdown my Mac but that is not helpful to solving the problem
Yes this comment is helpful, but how do I cancel the update now? I think my computer probably didn’t have the empty space available. How do I cancel the update now that is in in progress???
