iPhone 11 has typing mind of its own

For the past week or so, when I type a message (either iMessage or a regular text message), the phone won't type what I'm typing, or, it'll highlight the previous text from the person I'm texting and come up with a list of emoji's and ask if I want to copy, translate, more.

It is so frustrating trying to type a text and I get one letter typed and then it comes up with highlighting the previous text. I've shut it down 50 times, I've checked my storage, all good, I have the latest update... any ideas?
